Lightened Up Sweet Potato Casserole with Cashew & Oat Streusel and Mallows

A delicious and dreamy sweet potato casserole, perfect for Thanksgiving, featuring a lightened-up mash, a crunchy cashew and oat streusel, and toasted marshmallows.

What you need

cup coconut milk

tsp cinnamon

cup oat flour

tbsp coconut oil

pinch salt

cup rolled oats

marshmallow

tsp vanilla extract

cup coconut sugar

cup raw cashews

Instructions
1. Steam or bake sweet potatoes until very soft. Let them cool, then peel the skin off. 2. In a food processor (or using a potato masher by hand), combine all sweet potato mash ingredients (sweet potatoes, 2.5 tbsp pure maple syrup, 1/2c coconut milk, 1 tsp vanilla, 1 tsp cinnamon, pinch of salt) until smooth. Transfer the mash to a baking dish. 3. In a separate bowl, mix all oat & cashew streusel ingredients (1/3c rolled oats, 1/8c oat flour, 1/3c coconut sugar, 1/2c chopped raw cashews, 3 tbsp coconut oil) and spread the mixture evenly on top of the sweet potato mash. 4. Bake the casserole at 400°F (200°C) for 30 minutes. 5. After 30 minutes, add mallows (marshmallows) on top and bake for another 10 minutes, or until the mallows are browned.
