Dairy Free Turkey & Sage Wild “Rice” Soup

A delicious and comforting dairy-free turkey and sage soup with cauliflower rice, perfect for using up leftover turkey. This recipe can be whipped up in under an hour and is packed with flavor.

What you need

pepper
cup mushrooms

cup cauliflower rice

cup turkey

tsp ground sage

cup parsley

cup dry white wine

cup unsweetened coconut milk

clove garlic powder

tbsp water
tbsp arrowroot powder

cup white onion

tsp dried thyme

cup celery

tsp garlic clove

cup carrot

cup vegetable broth
Instructions
1. Add chopped onions, celery, mushrooms, carrots, and garlic to a soup pot and sauté until fragrant. 2. Add in thyme, sage, and salt and sauté with the vegetables for 2-3 minutes. 3. Add white wine, veggie broth, and coconut milk to the pot. Simmer for 5 minutes. 4. Add turkey (or chicken) and cauliflower rice and simmer for an additional 10 minutes. 5. Once done cooking, turn off the heat. 6. Prepare a slurry by mixing arrowroot powder and cold water, then slowly whisk it into the soup to thicken. 7.
