WHIPPED FETA WITH BALSAMIC ROASTED STRAWBERRIES - the appetizer of summer ☀️ RECIPE: 8oz feta 1/2c greek yogurt Drizzle of olive oil Cracked pepper Minced garlic 1/2 tsp 2 lb strawberries 2 tbsp balsamic vinegar 1.5 tbsp honey 1/2 shallot (about 1/4c) French bread or sourdough bread cut into toasts, toast it in the toaster or on a pan with butter. Fresh basil, chopped Drizzle of olive oil Preheat your oven to 375. In a food processor, blend your Greek yogurt, feta, olive oil, and garlic on high until smooth. Place in a low bowl in the fridge. Remove the stems of your strawberries and them into fourths. Put in a large bowl, toss with balsamic + honey. Place on a baking sheet with parchment paper. Slice your shallot and sprinkle on with the strawberries. Bake for 30 minutes. LET COOL COMPLETELY (maybe take off pan and place in fridge for 15). Chop your fresh basil. When strawberries are cooled, place on top of your whipped feta and sprinkle with basil and a drizzle of olive oil. Serve with warm bread! Enjoy!

Remove the stems from your strawberries and cut them into fourths. Put the cut strawberries in a large bowl, toss with balsamic vinegar and honey. Place the seasoned strawberries on a baking sheet lined with parchment paper. Slice your shallot and sprinkle it over the strawberries. Bake for 30 minutes. Let the roasted strawberries cool completely (you can transfer them off the pan and place them in the fridge for 15 minutes to speed up cooling). Chop your fresh basil. Once the strawberries are cooled, spoon them on top of your whipped feta. Sprinkle with fresh basil and a drizzle of olive oil.
