Chocolate Covered Oat + Date Bars

Chocolate covered oat + date bars (dairy free <3) A super simple lil sweet treat. Also incredibly easy so a good one to get the kiddos involved in! This recipe is entirely vegan and gluten free.

What you need

pinch salt

cup rolled oats

tsp cinnamon

cup dark chocolate chips

oz medjool dates

tbsp coconut milk
Instructions
Submerge the dates in hot water to soften them up, and set aside. In a food processor, add in the oats, cinnamon, and salt and pulse until oats are broken up. Strain your dates after about 10 minutes of soaking and squeeze out excess water. Add your dates in 2 batches to your oat mixture and pulse until mixed. Add in the milk and mix again. Line a pan with parchment paper (I used an 8x8 cake pan) and flatten your oat mixture in the pan. Place in the freezer for 1-2 hours. Before removing from the freezer, make your chocolate shell by melting (on low) dark chocolate chips and coconut oil. Pour into a bowl and let cool for 15-20 minutes. Remove oats from the freezer and cut into bars. Drown with chocolate and with 2 forks, lift and let chocolate drain off. Set on parchment paper on a sheet tray and sprinkle with flakey sea salt. Place chocolate covered bars in the freezer for 15 minutes. Enjoy! Store these in the fridge!View original recipe
