Sheet Pancakes with Brown Sugar & Bananas

The easiest weekend brunch ever, especially for a group! Make fluffy pancakes on a sheet pan without having to stand by the stove flipping. This version features brown sugar and bananas, but can be customized with other fruits like blueberries or strawberries.

fl oz maple syrup

banana

cup cashew milk

cup brown sugar

butter

dairy free butter

Instructions
Melt 1/3 stick of butter on the stove and mix with your brown sugar until it forms a wet sand texture. Set aside. Make your pancake mix per the directions on the back using 2.5 cups mix, 1.5 cups cashew milk, and 2 eggs. Preheat your oven to 375°F (190°C) and place a sheet pan in the oven to heat up. Slice your bananas lengthwise into long strips and set aside. Once your pancake mix is ready, carefully remove the hot sheet pan from the oven. Take a stick of dairy-free butter and generously grease the pan, including the edges. Pour your pancake mix onto the pan, then sprinkle the brown sugar mixture and swirl it in. Lay the banana strips throughout the batter. Bake at 375°F (190°C) for 15 minutes, or until the batter is set and the edges are golden brown.
