This was earth shattering. Such a good lil summer appetizer, definitely ate the entire thing for lunch 🙃 slow roasted cherry tomatoes are so mf’n goooooood. They take on a entirely new flavor profile - real good on avocado toast, in an egg scrambles, salads, etc. etc. such a versatile lil tomato 🥰

What you need

tbsp honey

clove garlic clove

lb cherry tomato

cup plain greek yogurt

bread

oz feta
cup fresh dill
Instructions
Chop cherry tomatoes in half and lay face up on a sheet pan with 3 cloves of garlic spread throughout. Drizzle with olive oil and bake at 225°F for 2 hours. Once done baking, break up your block of feta into a food processor, add 1 tbsp honey, 2 tbsp olive oil, 3/4c plain Greek yogurt, and the 3 roasted garlic cloves. Blend on high until fully mixed. In a medium bowl, add your roasted tomatoes and toss with 1/4c chopped dill and a drizzle of olive oil. Pour whipped feta into a bowl and top with tomatoes & drizzle with olive oil again.
