THAI PEANUT & CHICKPEA SANDWICH

Whipped up this quick lunch that did not disappoint! Between the chickpeas and peanut butter, there is plenty of protein in this delicious, filling, and plant-forward sandwich.

What you need

lettuce
fresh tomatoes

cup fresh cilantro

cup red onion

slice sourdough bread

cup peanut butter

tbsp coconut aminos

tsp garlic powder

tbsp water

tsp ground cumin

tsp cayenne pepper

can chickpea
Instructions
First, make the peanut sauce: combine peanut butter, coconut aminos (or soy sauce), garlic powder, cumin, cayenne, and water in a bowl. Mix very well until the sauce is drippy. Add the prepared peanut sauce to the mashed chickpeas, then stir in the chopped red onion and chopped cilantro. Lightly toast some sourdough bread. To assemble the sandwich, spread the chickpea mixture onto the toasted sourdough, add sliced tomatoes and lettuce, and drizzle with sriracha.View original recipe
