Instructions
FOR THE OLIVE MIX: Heat olive oil on a skillet until hot. Add your Castelvetrano olives and let them sit still for 8-10 minutes to get blistered and browned. After pan searing, turn the heat to low. Add the thinly sliced shallot and sauté until translucent and fragrant. Add in minced garlic, a pinch of salt, and red pepper flakes. Mix well and remove from heat. Add in the fresh juice from half of an orange at the end. Transfer the olive mixture to a bowl. Add in the chopped parsley and oregano, and crushed pistachios. FOR THE GOAT CHEESE: Combine goat cheese, minced garlic, a pinch of salt, and cream in a food processor. Mix until smooth. Pour the whipped goat cheese into a bowl and top with the prepared olive mixture. Zest with fresh orange peel. Serve immediately with buttery crusty bread for dipping and enjoy!View original recipe
