What you need
cup full-fat coconut milk

tsp red pepper flake

tbsp pesto sauce

oz parmesan cheese

tsp salt

cup pasta

cup vegetable broth

cup corn

tsp pepper
Instructions
Preheat oven to 400 degrees. Add all ingredients to an oven-safe baking dish, stir well to combine. Cover and bake for 12 minutes, remove from oven and stir to make sure pasta is not sticking together. Cover and return to oven for another 15 minutes. Remove from the oven, stir and taste (you may want to add more salt, more red pepper flakes, or another scoop of pesto). Serve in a bowl topped with fresh parm & enjoyyy!View original recipe
