SPICY PUMPKIN + TOMATO PASTA

Legit the easiest, most delicious fall inspired pasta dish. I essentially took my hangover pasta recipe (oldie but a goodie + a life saver) and added pumpkin because that’s the rule from mid-September to end of November - add pumpkin to everything.

What you need

cup coconut cream
cup pasta water

cup shallot
tsp salt & pepper

cup tomato paste
cup pumpkin puree

cup parmesan cheese

clove garlic clove

cup pasta
tbsp Calabrian Chili
Instructions
Boil a pot of water with salt and cook pasta al dente (about 6-7 mins). While water is heating up, in a large skillet heat olive oil, add in shallot and garlic and sauté until fragrant. Add in tomato paste and stir around, add in coconut milk, Calabrian chilis, pumpkin purée, and salt and pepper. When water is boiling add your pasta, be sure to reserve 1/2c of pasta water (while pasta is boiling in there), add this to your sauce, sauce should be on a low heat and simmering.
