Savory Mushroom Oatmeal (Vegan)

This warm and cozy savory mushroom oatmeal is a delicious vegan alternative that tastes just like risotto. It can easily be made non-vegan with cheese.

What you need

bunch green onion
cup steel cut oats
tsp salt

tsp soy sauce

oz parmesan cheese
cup mushrooms

cup nutritional yeast

clove garlic clove

cup water
cup brown onion

tsp cracked black pepper
cup vegetable broth
cup fresh mushrooms
Instructions
Sauté 1 clove garlic, 1/4 cup chopped onions, and 1.5 cups chopped mushrooms with olive oil on medium heat until fragrant and browned. Add 1/2 cup steel cut oats and toast for 1 minute, stirring frequently to avoid burning. Add 1 teaspoon coconut aminos (or soy sauce), 3/4 cup water, and 3/4 cup veggie broth. Reduce to a simmer and cover for 15 minutes, stirring occasionally to avoid a burnt bottom. Once done, add in 1/4 cup nutritional yeast (or parm cheese), 1/4 teaspoon salt, and 1/4 teaspoon cracked pepper.
