Quick Pantry Pasta with Coconut Cream

What you need

clove garlic clove

shallot
pinch salt

oz parmesan cheese

cup coconut cream

cup pasta

pinch red pepper flake

cup tomato paste
cup pasta water

tbsp pepper
Instructions
Bring a pot of water and a pinch of salt to a boil, then boil 2 cups of pasta according to package directions. In a sauté pan, bring heat to medium, add olive oil, minced shallot, and minced garlic, sauté for 1-2 minutes. Add tomato paste and coconut cream, stir until combined. Add in 1/2 cup of reserved pasta water (do not miss this step). Once noodles are al dente (about 2 mins less than recommended on packaging), strain the pasta and add it to the sauce pan.
