Pancake Breakfast Tacos (McGriddle Style)

Prepare pancake shells: Combine 1 cup pancake mix, 3/4 cup water, and 1/2 scrambled egg to make three pancakes (or follow your pancake mix instructions). Cook the pancakes, then once done, roll them out with a rolling pin to flatten them slightly into taco shell shapes. Scramble 3 eggs and mix with cheddar cheese. Cook bacon strips until crispy (1-2 strips per taco). Cook 1/2 cup hash browns. Assemble the tacos by filling each pancake shell with scrambled eggs, bacon, and hash browns. Drizzle generously with maple syrup and garnish with green onion or chives to taste. Enjoy!
