ONE POT WILD MUSHROOM & MISO PASTA. mother of actual god this was so good. The miso mixed with creamy @elmhurst1925 unsweetened oat milk + wild mushrooms makes for the creamiest, most umami flavor. I added peas for a lil pop of green but you could really add whatever veg to this - arugula or broccoli would be good!

What you need

tsp Miso Soybean Paste
tsp salt & pepper
cup dairy free milk

shallot

tbsp nutritional yeast

oz pasta

cup peas
tsp garlic
cup vegetable broth
cup mushrooms
Instructions
Drizzle olive oil in a pan, heat on medium, add in shallots and sauté for 3-4 mins until browned, add in your mushrooms and sauté for another 3ish mins. Add in your garlic and turn heat to low (garlic burns quickly). Add in your broth, non dairy milk, nutritional yeast, and miso. Bring to a light boil, add in your pasta and cover for 3 mins, stir to make sure the pasta isn’t sticking. Cover for another 7-8 mins, check on your pasta and if it’s done / broth is soaked up (pasta should be Al dente). Stir well and add frozen peas, stir again! Add salt if needed, and add pepper!
