What you need

tbsp balsamic vinegar

pinch salt

lb strawberries

tbsp chia seed
Instructions
Wash and chop your strawberries and add to a sauce pot with 1.5 tbsp of balsamic vinegar. Stir well and have heat on low / medium. Start to simmer and let the heat do the magic. It will begin to look watery but the key to thickening your jam is low and slow and patience. The water needs to boil off. Stir frequently and leave on a low simmer for about 30 minutes until it starts to thicken. Add in 3 tbsp of honey (add more if you want it sweeter), and a pinch of salt. Stir well and just when the jam is about done, add in 1.5 tbsp of chia seeds and remove from heat. Stir well and let it sit for a bit of the chia seeds to soak up some excess water. This will also help your jam thicken. Store in an air tight container in the fridge! That’s it, enjoy!View original recipe
