Grilled Cheese with Apple + Bacon Jam

Never met a grilled cheese I didn’t like. I’m mad at whoever coined grilled cheese a “kids food”. We’re changing that. This recipe features a sweet and savory apple bacon jam, gruyere, white cheddar, and fresh arugula on a perfectly grilled sandwich.

What you need

oz gruyere

slice bread

slice bacon

tbsp balsamic vinegar

cup granny smith apple

cup apple cider vinegar

oz white cheddar

tsp cayenne pepper

cup white onion

tbsp maple syrup

tbsp butter

clove garlic clove

tsp worcestershire sauce
Instructions
1. In a skillet on medium heat, add your chopped bacon and sauté until cooked fully through, about 8 minutes. Stir frequently so it doesn’t burn. Remove from pan and set aside. 2. Add your chopped onions to the same pan and sauté for 10 minutes. 3. Add in chopped garlic and chopped apples. Add in 1 tbsp of butter and sauté for another 8 minutes. 4. Add apple cider vinegar, maple syrup, cayenne, Worcestershire, and balsamic vinegar. Stir and set heat to low and simmer for 15 minutes with the lid ON. It should achieve a jammy texture. 5. While the jam is simmering, thinly slice gruyere and white cheddar cheese (to your preference for cheesiness). 6. Remove jam ingredients from your pan and place into a small blender or use an immersion blender to blend until it reaches an applesauce-like texture. 7. Heat your skillet to low-medium heat and add 1 tbsp of butter, spreading it around. 8. Spread your apple bacon jam liberally on 1 piece of toast. Place the toast in the pan, jam side UP. Spin it around to coat it with the butter. 9. Add a small handful of arugula. Add your cheese on top. 10. Add a thin layer of jam on the other slice of bread and place it on top of the sandwich, jam side DOWN. 11. Put the lid on and keep heat to low. Let toast for 5 minutes, then check the toastiness of the bread. If it’s golden brown, flip the sandwich. 12. In between flipping, add in 1 more tbsp of butter and spread around. 13.
