EASY VAN MEAL (even easier at-home meal). Asian-inspired turkey lettuce wraps, think PF Changs, minus the MSG 😉 I made this in about 15 mins and only used one pan! The best.

What you need
lettuce cups

bunch green onion

fl oz sriracha hot sauce

tsp soy sauce

cup creamy peanut butter

cup red onion

shiitake mushrooms
tbsp fresh garlic

tbsp water chestnuts

lb ground turkey

cup carrot

tbsp water
Instructions
In a large pan, bring a drizzle of avocado oil up to medium heat. Add in 1/4 cup chopped red onion, 1 cup sliced carrots, 2 large shiitake mushrooms (or any other mushroom), 1 tablespoon garlic, and 1/2 cup chopped water chestnuts. Sauté until slightly browned, about 6 minutes. Move the vegetables to the side of the pan and add in 1 pound of ground turkey breast. Grind and cook the turkey, then fold in the sautéed veggies from the other side of the pan. Continue to cook until the turkey is fully cooked through. Add in 1/2 cup Soyaki sauce and remove from heat. Let sit for 5 minutes to soak up the sauce. To make the peanut sauce: combine 1/4 cup peanut butter, 1/2 teaspoon soy sauce, and 3 tablespoons water (add more if needed) until you get a drippy consistency. Chop green onions. Place the turkey mixture in lettuce cups, drizzle with peanut sauce, and top with green onions and sriracha or hot sauce. Enjoy!View original recipe
