What you need

cup raw cashews

tbsp vanilla protein powder

tbsp vanilla extract

pinch salt

tbsp sprinkles

cup cashew butter

cup oat flour

tbsp coconut oil

splash lemon juice

cup water
Instructions
FOR THE BALLS: 1. Add all wet ingredients (vanilla, maple syrup, melted coconut oil, cashew butter) into a large bowl and mix well. 2. Add in all dry ingredients (oat flour, vanilla protein powder) and mix to make a dough-like consistency. 3. Cover the dough and refrigerate for 10 minutes. 4. Add sprinkles in last before rolling into balls. FOR THE ICING: 1. Soak 1/2 cup of raw cashews overnight or for 30 minutes in boiling water. 2. Pour the soaked cashews, 1 tbsp coconut oil, 2 tbsp maple syrup, 1/2 tsp vanilla, a squeeze of lemon, a pinch of salt, and 1/4 cup water into a high-powered blender. 3. Blend on high for 1 minute until smooth and creamy. 4. Refrigerate the icing for 1 hour. ASSEMBLY: 1. Roll the dough into golf ball sized balls. 2. Drizzle with the cashew icing right before serving. 3. Sprinkle with a few more sprinkles if desired.View original recipe
