What you need

tbsp dried dill weed

cup sharp cheddar

tsp garlic powder
cup bread crumbs

tsp salt

cup plain flour

cup pickle

fl oz olive oil cooking spray
cup grated parmesan cheese

cup cottage cheese

tsp cayenne pepper
egg
Instructions
In a large bowl, combine your three cheeses (shredded sharp cheddar, grated parmesan, cottage cheese), 1 egg, flour, garlic powder, salt, and cayenne. Mix well until combined. Add in your Grillo’s Pickle De Gallo (straining the juice a bit before adding) and mix again. Get a plate out with parchment paper and roll your dough into golf ball sized balls. Set onto the plate. Freeze for 45 minutes (this helps them hold their round shape in the air fryer). Crack the remaining egg in a small bowl and whisk. In a separate bowl, add your dill and breadcrumbs and mix. After your balls are semi-frozen, remove from freezer and roll one at a time in the whisked egg and then toss into the breadcrumbs, making sure you get a nice coating. Spray the tray of your air fryer with avocado or olive oil, place the balls in the tray and spray again to ensure they crisp up. Air fry at 390°F for 12 minutes. Let cool and dip in ranch.
