
VEGGIE + RICOTTA EGG BAKE

What you need

leek

cup broccoli
brown egg

milk

ricotta cheese

feta

basil

italian seasoning

garlic powder

iodized salt

black peppercorn
Instructions
Pre heat oven to 400 degrees. Get out 2 large baking sheets, chop your veggies and lay on baking sheets. Spray with olive oil and season with salt and pepper. Bake for 20 minutes. While veggies are baking, in a large bowl, crack 12 eggs, season with salt, pepper, and 1 tsp garlic powder. Whisk together to combine. Once veggies are done, spray a 9x13 baking dish and lay half the veggies down. Pour eggs over top, season with your Italian seasoning. I didn’t measure this, just get a good amount covering the whole dish. Add the remainder of the veggies on top. Use a spatula to press veggies down to make sure they’re evenly distributed. Sprinkle feta cheese, add dollops of ricotta cheese throughout, season with salt and pepper. Bake at 350 for 35 - 40 minutes, or until center of the eggs are baked through (it shouldn’t be jiggly). Remove from oven and sprinkle with basil. ENJOY!View original recipe
