
HONEY + OAT + CHOCOLATE CHIP GRANOLA BARS
One of my favorite easy snacks to make ahead of time for the week. No baking or chopping involved so a nice recipe to get the kiddos involved in. These are my version of the Chewy granola bars from our childhood, minus the all of the shit ingredients
What you need

tbsp unsweetened almond milk

tsp vanilla extract

iodized salt

tsp ground cinnamon

tbsp coconut oil

cup honey

cup crunchy peanut butter

cup raw cashews

cup rolled oats
Instructions
In a sauce pan on LOW heat, add PB, honey, coconut oil, & vanilla and mix to combine. Once liquidy & mixed, turn off heat right away. In a large bowl, add your oats, crushed cashews (just put into a bag and crush by rolling a rolling pin over them, or a wine bottle, no judgment here), cinnamon, salt, & nut milk. Add in your PB + honey mixture and a lil pinch of salt. Mix well, get in there and use your hands if you have to. Put in the refrigerator for 30 minutes until cooled, this is so your chocolate chips do not melt when you add them. Once mix is cooled, add your chocolate chips and mix well. In a square pan, add parchment paper and then your mixture, press down with your hands making it as even as possible. Return to the fridge overnight (this is best, but can do a few hours if you’re a hangry bitch like myself) cut into granola bars, store in an airtight container for the week!
