Pesto Egg Sandys (Sandwich)

Current hyper-fixation food: pesto egg sandys. As a health-focused recipe developer, I cannot help but want to remake things from restaurants at home with better-for-you ingredients. I had something like this at a cute lil breakfast cafe in San Luis Obispo last weekend and I’ve been making it at home every morning since.

2 pieces of sourdough toast, buttered both sides. I use @miyokoscreamery dairy free butter, but you do you. Place one side down on a pan and toast on medium heat until golden brown, flip your toasts and add mozzarella cheese to one piece. I used @miyokoscreamery dairy free mozz but again, do your thang. Put a lid on the toasts so that the cheese melts. Toast until other side is golden & crispayy. Remove from stove and place toasts on a plate, lather on pesto to one piece, don’t be stingy. Add sliced tomatoes, and oh ya, fry an egg as well. Over easy is the best so you get a little yolkage. Add the egg, top with the other piece, and slice in half and crush. The. Whole. Thing. Dip in hot sauce if you wish 🤌🏼
