This was truly one of the easiest things I’ve ever made, it was finished in probs 20 minutes and required zero prep. Perfect for those busy parents or the freaks that don’t like spending a ton of time in the kitchen 😉.

Saute your veggies with some olive oil on high heat until browned, add in 1 can of drained chickpeas/garbanzos, add 1 jar of red curry sauce, 1 can roasted tomatoes, and 1/2c coconut milk. Set to low and put the lid on and simmer for 10 minutes. While curry is simmering, heat your frozen rice on the stove top for 10 minutes. Or microwave for 3 minutes.
