Sweet Breakfast Bowl with Coconut Quinoa

It’s a SWEET ASS breakfast bowl with coconut quinoa, cinnamon sweet potatoes, caramelized banana, peanut butter, hemp seeds & coconut. If you like sweets for breakfast (normally I don’t but was feelin funky) youuuu need this in your mouth. The coconut maple quinoa changed me.

Chop sweet potato and season with coconut oil & cinnamon. Bake at 425 until they look however you like them (like 25ish mins). Cook 1/2 cup quinoa with 1/2 can of full fat coconut milk & 1/4 cup water. Bring to a boil then reduce to a simmer & cover until done. Also add 1 tbsp pure maple syrup if you know what’s good for you. Slice banana in half (hamburger way) and then in half again (hotdog way) and sear in coconut oil until caramelized. Put together your bowl with the coconut quinoa as the base, then the sweet potatoes & banana. Add a scoop of peanut butter & coconut, and sprinkle with hemp seeds. Drizzle with maple syrup if you’re an addict.
