Bring a pot of water and a pinch of salt to a boil, then boil 2 cups of pasta according to package directions. In a sauté pan, bring heat to medium, add olive oil, minced shallot, and minced garlic, sauté for 1-2 minutes. Add tomato paste and coconut cream, stir until combined. Add in 1/2 cup of reserved pasta water (do not miss this step). Once noodles are al dente (about 2 mins less than recommended on packaging), strain the pasta and add it to the sauce pan. Stir and cook for 1-2 minutes. Add parm cheese or vegan parm and enjoy!
