CHUNKY MONKEY YOGURT POPS

my lil take on the viral frozen yogurt berry bites. It’s a perfect summer treat to have in the freezer and a really good recipe to get your kiddos involved in!

In a medium bowl, mix in your Greek yogurt, PB2, maple syrup, and cinnamon. Chop your 1.5 bananas into small chunks and add into the bowl, fold in gently to avoid mashing the bananas. Scoop mixture onto parchment paper on a baking sheet into 2-3 inch rounds. Place a popsicle stick into mixture and add a little more on top to cover up the stick. Place baking sheet into your freezer for 2 hours. Before removing from freezer, melt dark chocolate + coconut oil on LOW until liquidy. Pour into a bowl. Remove your pops from the freezer and pour chocolate over them - chocolate will harden pretty quickly. Lay popsicles back on parchment paper and do another drizzle, sprinkle crushed peanuts and sea salt on while chocolate is still melted. Place in freezer for another 5 mins. Before eating, take a popsicle out of the freezer for 5-10 minutes to soften a little bit. Enjoy!
