first pickle your cucumbers - you want these to sit the longest so do this first (even do the day before if you can remember / have time). slice your mini cucumber into chips, and stuff into a jar. Boil 3/4c water + 1 tbsp sugar and pour over your cucumbers. Top off with vinegar and seal. Store in fridge. Get your rice started by cooking your white rice however you normally do it (I love my instant pot for this). Take your salmon and skin it, dice into bite sized pieces and put into a large bowl. Toss salmon in honey dijon sauce and air fry at 375 for 13m. Should be crispy! While salmon is cooking, make your mango salsa by dicing your mango, red bell pepper, red onion, jalapeño, and cilantro. Put into a medium sized bowl, add lime juice and salt! Put into fridge. Assemble your bowl when everything is done. Rice down first, with salmon, mango salsa, and cucumbers on top, top with sesame seeds if you’re feelin it.
