Preheat your oven to 325 degrees. In a large bowl add in your oats, crushed cashews, coconut, chia seeds, hemp hearts, cinnamon, flour, and salt. Mix well. Add in your liquids - maple syrup, olive oil, and vanilla. Mix well. Add onto a cookie sheet covered in parchment paper and flatten out into a rectangle (make sure it is EVEN, especially along the edges. Otherwise your edges will burn and your middle won’t be crispy). You want it like 1/4 inch thick. Bake for 35-45 minutes (depending on your oven. Granola should be golden brown and crispy). Remove from oven and let cool for 5 minutes before placing into the freezer immediately for 30 minutes. This is how you get CLUSTERS. Store in a Tupperware or large mason jar in the FRIDGE to help hold its shape and stay crispyyy. Serve on top of a smoothie or yogurt bowl or just snack on it. Enjoy!
