Chop about 1 cup total of three of your favorite vegetables (about 1/3 cup each). Sauté them with 1 tablespoon of butter (or vegan butter) until browned. In a separate pan, scramble 2-3 eggs, then pour them evenly onto the pan to create a thin layer. Drizzle the cooked eggs with hot sauce and approximately 1/4 cup of cheese (or vegan cheese). Heat a large tortilla. Lay the heated tortilla on top of the gooey eggs. Cook on low for a few minutes. Flip onto a plate, let cool for 5 minutes, then roll it up and dip in your favorite salsa.
