Delicious vegan cookie dough bites naturally sweetened with pure maple syrup and dark chocolate chips. Quick and easy to make in about 15 minutes plus freezing time.

Mix tahini, vanilla, coconut oil (melted & cooled), and maple syrup into a large bowl. Add the oat & coconut flour, and the salt. Stir well until you get a cookie dough consistency. Let it sit for 5ish minutes to thicken up. Your mixture should not be too wet! If it is, add in a half a tablespoon of coconut flour at a time until it has reached your desired consistency. Keep in mind they will dry up a bit once they cool so you do want it moist. Stir in your dark chocolate chips. Line a baking sheet with parchment paper and scoop dough and roll into a golf ball sized ball. you should have somewhere around 10 cookie dough balls. Freeze for 15 mins, and enjoy! Store in an air tight container in the fridge!!
