Delicious pickled onions, perfect for avocado toast, salads, sandwiches, curries, or by the forkful. Easy to make and store in the fridge for the week.

In a small sauce pan, heat 1/2 cup water, 1 tsp sugar, 1/4 tsp salt. Whisk until sugar & salt are dissolved. Bring to a light boil and shut off right away. Thinly slice 1 red onion, if you have a mandolin this may work best but a knife works fine! Place entire sliced onion into an air tight container. Once the onion is in the jar, fill about 1/2 way with white vinegar. Top it off with your water mixture until all onions are covered. Seal up, store in fridge overnight (ideally), and then you have the most stunning pickled onions the next morning. ENJOY!
