Mango Sticky Rice Krispie Bars

A creative twist on classic Rice Krispie bars, infused with the tropical flavors of mango sticky rice using toasted coconut, dried and freeze-dried mango, and coconut extract.

Melt 2 tbsp of butter over low / medium heat. Once melted, add shredded coconut and begin to toast, stirring frequently to prevent burning. Remove from heat once golden brown. In a food processor, blitz freeze dried mangos into a fine powder. Chop dehydrated mango into tiny bite sized pieces, about 1 cup worth. In a large pot, melt 8 tbsp of butter. Add in 1 bag of marshmallows and stir well until fully melted. Add in coconut extract and blitzed mango powder, stir well. Add in toasted coconut (leaving about 1/2 cup for topping), dehydrated mango, and Rice Krispies. Fold gently to combine. In a 9x9 pan lined with parchment paper, press to flatten. Top with shredded coconut, black sesame seeds, and flakey sea salt. Let cool for 1 hour. Cut into squares and enjoy!
