absolutely here for the second viral moment for cottage cheese. CRAISIN + THYME COTTAGE CHEESE BREAD. this would go nutsss on a turkey sandyyy omg -1 1/2 teaspoons (5 g) active dry yeast -1/3 cup (75 g) lukewarm water -1 cup (250 g) egg whites or 7 to 8 egg whites -1 cup (255 g) full fat cottage cheese -4 2/3 cups (582 g) bread flour, plus more for dusting -1 tablespoon (10 g) Diamond Crystal kosher salt -1 cup craisins -3 tbsp fresh thyme -Zest from 1 orange Add active dry yeast and Luke warm water to a large bowl and mix, set aside to hydrate for 20 mins. Separate the yolks from the whites and food process 7 yolks with full fat cottage cheese until creamy. Add this mixture to your yeast and mix. Sift in bread flour and salt, mix until a lil shaggy. Add in craisins, fresh thyme, and zest from 1 orange. Flour your clean surface and knead the dough for 5-6 minutes. Roll into a ball and set in a bowl covered to rise for 1 hour. Depending on the size of your loaf pan (mine was a 9x5), I only used 2/3 of the dough and rolled it out and rolled into a lil loaf shape. In a baking pan lined with parchment paper, set in the loaf. Bake for 35-45 minutes at 400 degrees. Remove from pan, let cool a little, and then serve with butter and sea salt or make a fire turkey sandy. Enjoy! #cottagecheese #easyrecipes #easybaking
