GAME DAY CHICKEN TAQUITOOOOS. With a lil spicy Mexican crema + quick homemade pico de gallo.

Preheat your oven to 400 degrees. In a mixing bowl add your chicken, yogurt, salsa, taco seasoning and shredded cheese. Mix well. Add about 4 tbsp or 1/4c of mix to corn tortillas (heat these on the stovetop first otherwise they will not roll), and roll and set crease side down on a baking sheet. Brush with olive oil and bake for 15 mins. While baking make your spicy Mexican crema (1/2c Mexican crema, a good splash of hot your fav hot sauce, mix well). If you’re using sour cream add some water to thin it out. Make your pico de gallo (1c chopped cherry tomatoes, 1/4 chopped red onion, 1/4c chopped cilantro, pinch of salt) mix well! Add taquitos to a plate, drizzle with spicy crema, and top with pico de gallo, enjoy!
