Birthday Cake Energy Balls with Cashew Icing

Saturday’s are for the balls - MARCH BALL OF THE MONTH - birthday cake with cashew icing 🥺 this is the same cashew icing that I used on my cinnamon roll oatmeal and IT👏🏼IS👏🏼SO👏🏼DAMN👏🏼GOOD

FOR THE BALLS: 1. Add all wet ingredients (vanilla, maple syrup, melted coconut oil, cashew butter) into a large bowl and mix well. 2. Add in all dry ingredients (oat flour, vanilla protein powder) and mix to make a dough-like consistency. 3. Cover the dough and refrigerate for 10 minutes. 4. Add sprinkles in last before rolling into balls. FOR THE ICING: 1. Soak 1/2 cup of raw cashews overnight or for 30 minutes in boiling water. 2. Pour the soaked cashews, 1 tbsp coconut oil, 2 tbsp maple syrup, 1/2 tsp vanilla, a squeeze of lemon, a pinch of salt, and 1/4 cup water into a high-powered blender. 3. Blend on high for 1 minute until smooth and creamy. 4. Refrigerate the icing for 1 hour. ASSEMBLY: 1. Roll the dough into golf ball sized balls. 2. Drizzle with the cashew icing right before serving. 3. Sprinkle with a few more sprinkles if desired.
